If there was one vegetable I could banish from existence, Cauliflower would be it. Long have I hated it’s bitter taste and in the days when I was overweight and unhealthy I even used it to try to induce food aversion for certain junk foods (interestingly, it almost exactly resembles the common weaning technique of rewarding a spoonful of veggies with a spoonful of fruit or even pudding. A technique that has yet to be proven to work, but I digress...). It’s safe to say, I hate cauliflower and not even drowning it in cheese helped at all. That is, until I discovered cauliflower mash!

By some miracle, I am able to enjoy the various health benefits of cauliflower without the hideous cauliflower taste. Not only that, but my children have no idea that it isn’t regular mashed potatoes… a clear parenting win! Don’t ask me how it works, but it absolutely does!
Let me share the magic with you…

Ingredients:
• 1 head of cauliflower
• 2 tbsp refined coconut oil (or butter)
• 2 tsp coconut milk
• Salt and pepper to taste
Method:
1. Roughly chop the cauliflower and add it to a pan of slightly salted water. Allow to boil for 20-25 minutes
2. Drain the water and add the softened pieces of cauliflower to a food processor along with the coconut oil (or butter), coconut milk and a pinch of salt and pepper. Mix until smooth, adding coconut oil/salt/pepper to taste as you go.
3. Serve!
Serves: A family of 4.

It’s just so easy! The only downside is that 1 head of cauliflower doesn’t go as far as the equivalent value in potatoes but it is oh so worth it.
Handy Hint: Don’t use Organic Cold Pressed coconut oil or it will just taste like coconut mash. Refined coconut oil still carries many health benefits and adds a creamy flavour and silky texture.
